Pumpkin Harvest Soup Recipe
Ingredients:
– 1 medium pumpkin
– 4 chopped onions
– 1 chopped bell pepper
– 2 minced cloves of garlic (or more if you love garlic!)
– 1 chopped chili pepper
– 1 stock cube
– Salt (to taste)
– Pepper (to taste)
– Neutral oil (like olive or avocado oil)
Instructions:
- In a large soup pot, sauté the onions and garlic in a little oil. Add the bell pepper and mix well.
- Carefully cut the pumpkin. Use a sharp knife and place a towel under the cutting board to keep it steady. Remove the skin and cut the flesh into chunks.
- Add the pumpkin to the pot.
- Pour in enough water to cover the veggies, and bring to a boil.
- Stir in the stock cube and chili pepper.
- Let it simmer for about 30 minutes, or until the veggies are soft and the flavors have blended together.
- Use an immersion blender to purée the soup to your desired consistency. If you don’t have an immersion blender, transfer portions to a regular blender and blend until smooth.
- Pour the soup back into the pot and season with salt and pepper to taste.
- Dig in and enjoy!
